除貓以外,我最愛的動物是異形 。 七套異形電影,重看多次,反思生命創造,受造物挑戰上帝……看異形,最好配1瓶以“異形”葡萄製的葡萄酒。
Apart from cats, my favourite creature is the xenomorph. I have watched all seven Alien franchise movies on loop, reflecting on life’s creation and how God’s creations challenge Him. To enjoy the best viewing experience, I recommend pairing them with a bottle of wine made from “Alien” grapes.
常見的葡萄酒,用歐亞種葡萄vitis vinifera造。著名的赤霞珠,DNA分析確認了是由品麗珠和長相思這兩種歐亞葡萄,種內雜交cross而成,所以赤霞珠同時有品麗珠的黑醋栗和長相思的青草味。看荷裏活電影異形,飲加州產,名導演哥普拉赤霞珠,庶幾近矣!如膜拜異形的同好,則應飲膜拜酒鷹嘯 Screaming Eagle,邊飲邊scream。
其他有名的種內雜交葡萄有,由黑皮諾和神索Cinsaut 雜交而生的南非代表Pinotage,可惜它僅有神索耐熱多產的優點,黑皮諾的優雅則欠奉。國人飲國酒,不少中外專家將馬瑟蘭譽為中國代表葡萄,它由赤霞珠和歌海娜在南法雜交出來,今日由中國的單一品種紅酒發揚光大,我最喜寧夏石咀山區的賀東莊。要發揚“異形”,可選Alicante Bouschet,它的雙親是Petit Bouschet及歌海娜,在南法,因它厚皮深色而混釀,在葡萄牙 Alentejo區,造出重口味單一品種紅,它最異之處是連果肉也是紅色。
異形第二、四集隱喻母愛,看異形電影,也可飲溫柔的黑皮諾。黑皮諾皮薄,丹寧低卻富含多酚分子polyphenol,香氣細膩而每口多變,跟初生異形一樣無孔不入。傳統黑皮諾賣點是單一酒園的獨特風土,比較Pommard兩大一級園Rugiens和 Epenots,前者陽剛,後者剛中帶柔,大同小異卻其樂無窮。但看異形,應behave更異形,有些黑皮諾釀酒師細分不同克隆clones,試品過意大利Oltrepo Pavese區Vigne Olcru莊不同號碼的黑皮諾克隆,本來基因相同但突變,風味各異,大開眼界,驚歎造物之奇,阿們!
美洲種葡萄vitis labrusca因能抵抗根瘤蚜蟲,主要提供葡萄根,讓歐亞種葡萄嫁接上去。美洲種葡萄,紅多過白。故名思義,它們多產於北美洲,紐約州是加州以外,美國第二大葡萄酒產州,主要葡萄是似加強版Muscat的Concord白葡萄酒。美洲種葡萄有一花名叫“狐狸味葡萄foxy grape”,味道比歐亞種葡萄強烈很多,個性突出,正如臭豆腐, 沒中間派,either like or hate,正合異形擁蠆。Concord找不到的話,可試雲南的水晶Niagara(白)或玫瑰蜜Isabella(紅)。
異形原作者瑞士藝術家吉格爾Giger,以生物和機械,性與死亡融合創造而成,理所當然,看異形可飲種間雜交hybrid 葡萄酒。種間雜交葡萄,味道介乎種內雜交及美洲種葡萄之間,全世界都有種植,所以也較易接受。
英國有Bacchus,似升級版長相思,可造優質靜態白葡萄酒或汽泡酒,毋負酒神之名。因為極耐寒,用於冰酒的威代爾 Vidal,種植地區遍及美加、中國東三省、寧夏,以至瑞典,夠甜不夠酸。日本代表紅葡萄是Muscat Bailey A,常見於超市或居酒屋,味道比保祖利Beaujolais更Beaujolais,有酒精之果汁。中國紅葡萄例子有雲南的法國野Bacon Noir、雲中舞Seibel 4646,最不可錯過的是台灣彰化県的黑后black queen,多作食用葡萄,但威石東莊Weightstone用傳統香檳法,釀出的黑中灰gris de noir,屢奪大獎,徹底改變食用葡萄不能釀酒之誤會,真異形酒也!

Common wines are made from Eurasian grape varieties, vitis vinifera. The renowned Cabernet Sauvignon has been confirmed by DNA analysis to be an interspecific cross between Cabernet Franc and Sauvignon Blanc. Therefore, it carries the dual character of the blackcurrant notes of Cabernet Franc and the grassy hints of Sauvignon Blanc. Watching Hollywood!&s Alien while sipping California!&s Cabernet Sauvignon produced by Hollywood movie director Coppola!H Pure bliss! For fellow Alien fans, the ultimate pairing is Screaming Eagle !X sip and scream in unison.
Other notable crosses include South Africa’s Pinotage, which is a crossing of Pinot Noir and Cinsaut. Unfortunately, it inherits only Cinsaut!&s heat tolerance and high yield but lacks Pinot Noir’s elegance. The Chinese take great pride in their national wine. Marselan, a cross of Cabernet Sauvignon and Grenache from southern France, is now widely regarded as the Chinese signature grape. It has found its home through the Chinese production of single-varietal red wines. My personal favourite is Chateau Hedong in the Ningxia!&s Shizuishan region. To embrace the spirit of !’alien,!( consider Alicante Bouschet, which is a cross between Petit Bouschet and Grenache. In southern France, the thick skin and deep colour quality from this variety make it ideal for blending. In Portugal!&s Alentejo region, it is used to produce bold, full-bodied single-varietal red wines. Its most distinctive feature is that even its flesh is red.
The second and fourth Alien films metaphorically explore maternal love. While watching Alien movies, one might also savour the gentle Pinot Noir. Pinot Noir boasts thin skins and low tannins but is rich in polyphenols. Its aromas are delicate, and they evolve with each sip, much like the newly born xenomorphs!& ability to infiltrate everything. Traditional Pinot Noir!&s charm lies in the distinctive terroir of single vineyards. Among Pommard!&s two premier crus, Rugiens is more rigid, while Epenots is like an iron hand in a velvet glove. Though similar, both offer endless enjoyment. But to truly embrace the Alien, one must behave even more strangely. Some Pinot Noir winemakers meticulously cultivate different clones. I have tasted various numbered Pinot Noir clones from Italy!&s Oltrepò Pavese region at Vigne Olcru. Although these clones share the same genetic origin, mutations have led to remarkably diverse flavour profiles. The experience was eye-opening, a true testament to the marvels of nature !X amen!
Vitis labrusca is valued for its resistance to phylloxera. Therefore, it primarily serves as a rootstock for grafting Eurasian grapevines. Vitis labrusca yields more red than white wines, and it is mostly cultivated in North America. New York State is America!&s second-largest wine-producing state after California, with its main grape variety being Concord grapes, a white wine reminiscent of a more potent Muscat. Vitis labrusca has a nickname: !’Foxy Grapes.!( Its flavour is far more intense than Eurasian grapes. It has a bold personality similar to stinky tofu: there!&s no middle ground; you either like or hate it, which makes it perfect for Alien enthusiasts. If Concord is unavailable, try Yunnan’s Crystal Niagara !]white!^ or Isabella!]red!^.
The original alien creature was designed by the Swiss artist H.R. Giger. It was a fusion of biology with machinery, sex with death, making it fitting to pair Alien viewings with hybrid wines. In terms of tastes, intraspecific hybrids are positioned between interspecific crosses and vitis labrusca. They are cultivated worldwide, making them more universally accepted.
In the UK, the Bacchus variety is akin to an upgrade version of Sauvignon Blanc, producing quality still whites or sparkling wines worthy of its namesake !V the Roman god of wine. Vidal is an incredibly hardy grape used for ice wine, and is cultivated across North America, China’s Northeast provinces, Ningxia, and even Sweden. It is sweet enough but lacks acidity. Japan!&s representative red grape is Muscat Bailey A, commonly found in supermarkets or izakayas. Its flavour is more Beaujolais than Beaujolais itself, essentially juice with alcohol. French Wild!&s Baco Noir and Dance of the Clouds!& Seibel 4646 are notable red grape varieties from the Chinese Yunnan province. The one that you absolutely cannot miss out on is Taiwan!&s Changhua County Black Queen, which is primarily used as a table grape. However, Weightstone Winery employs traditional champagne winemaking methods to craft a Gris de Noir from it, transforming this grape into a remarkable wine that has won multiple awards. This has significantly changed the misconception that table grapes cannot be used for winemaking. Truly an extraordinary wine!
